Top tuna dishes

Long Island chefs have made tuna a restaurant staple as familiar to diners as stuffed flounder. The big fish swims into sushi and seviche, tartare and carpaccio; it's in pastas and in burritos, it's peppered and seeded, it's all over the menu.
