The Fifth Taste Turns 100
It's one of those buzzwords that everyone talks about but few can explain.
You can blame the confusion on seaweeds. In 1908, Japanese chemist Kikunae Ikeda found that the monosodium glutamate, or MSG, which occurs naturally in the seaweed Kombu, provides a savory, satisfying taste that differs from the four flavors: sweet, sour, salty and bitter tastes.
