There’s been another chef change at Four Food Studio in Melville: Moving on is Ben Durham, who became executive chef last year after the departure of James McDevitt (now the new executive chef for the Bohlsen Restaurant Group). Currently helming Four’s kitchen is Antonio Guillen, who was sous chef under Durham.
Guillen’s new menu won’t be out for a couple of weeks. Among other dishes to be included in his fall repertoire will be house-made pumpkin fettuccine with roasted seasonal vegetables.
