Chef Steven Del Lima has left Vitae in Huntington to open an oyster bar and cocktail lounge in Manhattan. He said it could be the template for future ventures on Long Island.
Del Lima had been the chef at Vitae for almost four years in two stints. His most recent work there was less than a year. Sous chef Jerson Cruz now is running the kitchen at the Huntington restaurant.
Del Lima is a partner in White Oak Oyster Bar & Cocktail Lounge, on 10th Avenue in Manhattan, where his specialties are small plates and seafood. It's Del Lima's first Manhattan venture.
He said, "We're looking to maybe expand on Long Island," citing Huntington and East Hampton as possible locations.
The chef's local resume includes the departed Perfecto Mundo of Commack, Black & Blue Seafood Chophouse and Wild Fin in Huntington, Chow Down Diner in Levittown and CoolFish in Syosset.
