Grey Horse Tavern in Bayport has a new fall menu, and a new chef to go with it. Lia Fallon, who has helmed kitchens at Amarelle in Wading River, Jedediah Hawkins Inn in Jamesport, The Riverhead Project (now closed) and Brewology in Speonk, has come aboard the tavern owned by Irene Dougal and Linda Ringhouse.

Some of Fallon’s most popular new additions are skillet mac and cheese with smoked Gouda, caramelized onions and duck confit ($14), Moroccan-spiced cauliflower steak with brandied wild mushrooms and truffle ragout ($20) and a breast of chicken with smoked sweet-potato mash and charred haricots verts ($28).

Fallon, who has been working as a private chef since her last restaurant gig, has kept the focus on local, seasonal cooking and was happy to leave on the menu such favorites as fried pickles with sriracha ranch dressing ($8) and the NoFo farmstand salad with merlot vinaigrette ($14). The GHT burger ($14) is still made from a half pound of Niman Ranch beef and served on a multigrain roll with house-cut fries and slaw.

Grey Horse Tavern is open for dinner Tuesday to Sunday, lunch Friday and Saturday, brunch on Sunday. There’s live music most Friday and Saturday nights and Sunday afternoons. See the schedule here.
