A la Carte cooking school in Lybrook is offering a three-session grilling course. School owner Polly Talbott said, Were trying to create lots of backyard heroes.

Grilling 101 kicks off on Tuesday June 18 from 6:30 to 9 p.m.; the next two classes are on June 25 and July 2.

Talbott sets up three charcoal grills in the schools backyard and also uses a gas grill inside. All the basics are covered: equipment, tools, preparation, testing doneness, avoiding flare-ups and how to ensure everything is done at the same time.

Recipes from week 1 include hamburgers, steaks, corn and cedar-planked salmon; from week 2, chicken with garlic and herbs, lobster, steamed clams and dilled fish-and-vegetable packets; from week 3, grilled escarole and white been salad, baby back ribs with mustard-bourbon sauce, ancho-adobo flank steak, Greek-style grilled whole fish.

Cost is $300 for all three classes,  but you can also sign up for them individually for $115 apiece.
