When Anthony Coates, an investment adviser and longtime Suffolk County political insider, announced his candidacy for Riverhead Town Supervisor last year, he chose the Duck Pond in Wading River for the event. As he stood at the podium, he glanced at a vacant storefront on Sound Road and said to himself, “If I don’t win, I’m going to open up something in that store.”

Coates lost the election and, on Memorial Day weekend, he opened Hudson Market, serving baked goods, sandwiches and coffee.

“In this neck of the woods,” he said, “other than a few Starbucks kiosks, there aren’t a lot of options. I wanted to open a place where you could sit down, have a cappuccino or a macchiato or a good cup of drip coffee and a nice pastry.”

Right now Coates is brewing Variety Coffee Roasters (of Brooklyn), but he hopes to expand his caffeinated offerings as he gets a feel for the business. The pastries — cookies, biscotti, scones, muffins — are coming from D’Latte in Greenport; his bread comes from Blue Duck Bakery in Southold.
