Richard Burns, who had been executive chef at Jimmy Hays Steak House in Island Park since 1992, is no longer cooking at the restaurant.
“He put my business on the map,“ said owner Jimmy Hays. “This is the house that Burns built.“
Burns came to Jimmy Hays (one of Exploreli's 10 best steakhouses) after a culinary career that included the Waldorf-Astoria (under Georges Blanc) and La Caravelle. In 1975, he was opening chef at The Palace on East 59th Street, at the time the most expensive restaurant in New York. He ran kitchens at the Manhattan restaurants Hoexter’s Market, Uzie’s, Gianni’s at South Street Seaport and Vanessa on Bleecker Street. (Click here for a Newsday profile from 2009.)
Burns, who turns 80 in October (and has long had a license plate that reads OLDCHEF) is consulting at a new restaurant in Queens. Hays said that Burns’ longtime deputy, Carlos Miranda, is now the executive chef.
