Brewology, which refers to the science of brewing, now becomes synonymous with inviting New American cooking. Lia Fallon's restaurant in Speonk opens for dinner on July 2.
Fallon, formerly chef at The Riverhead Project, Jedediah Hawkins Inn in Jamesport, and the now-closed Amarelle in Wading River, runs the kitchen in this highly anticipated spot. It's situated at the former address of Mahogany's Sports Bar and Jack & Diane's restaurant.
Fallon's fare includes openers such as charcuterie, pickles, and grilled flatbread; fried potato nests, available plain or filled with cheese, sausage, scallions, tomatillo sauce and sour cream; a scallop BLT; and pretzel-crusted fried frogs' legs.
The Brewology burger is made with ground short rib and stuffed with barbecued pulled pork and beer-braised onions. Main dishes take in chicken and waffles; a deep-fried, espresso-rubbed rib-eye steak; smoked pork belly barbecue; and a Long Island cheesesteak, made with duck breast and smoked Gouda.
There are 24 beers available on tap, as well as several Long Island wines.
Prices range from $7 to $20 for starters and salads; $14 to $38 for main courses. Brewology currently is open for dinner.
