Fresh Hamptons restaurant hosts a six-course, oysters-and-wine pairing dinner on Dec. 6, starting at 7 p.m. Cost: $95 per person plus tax and tip.
Wines from Paumanok Vineyards will be matched with different preparations of Howard Pickerell's Pride Oysters.
The menu includes grilled oysters with chive beurre blanc and paddlefish caviar, paired with the Paumanok 2009 Blanc de Blanc; warm, poached oysters and organic leek fondue with the 2012 Paumanok Festival Chardonnay; tempura-battered oysters with Old Bay mayonnaise oysters Rockefeller and Mecox Bay Dairy Gruyere cheese, with the 2011 Paumanok Barrel Fermented Chardonnay,
They're followed by merlot-braised short ribs with collard greens and parsnip-potato puree with the 2010 Paumanok Merlot; and oyster-and-black pepper ice cream and yuzu sorbet with jalapenos, with the 2012 Paumanok Semi-Dry Riesling.
