There's always a good reason to enjoy pasta. On this sunny March afternoon, here are 10 full-flavored choices from five busy kitchens. Join the party now or, if you're observing Passover, next week is fine, too.

At Verace in Islip: look for the lively penne alla puttanesca, tossed with olives, tomatoes, capers tomato and zucchini; and the pristine linguine with garlic and olive oil.

If you're anywhere near Roslyn, visit Trattoria Diane for a bright Roman holiday: excellent spaghetti alla carbonara and savory bucatini all'Amatriciana.

Sergio's in Massapequa sends out a springy linguine primavera, with peas, artichokes, cauliflower and fried eggplant; and a zesty perciatelli with sardines and fennel.

Valley Stream's La Bistecca prepares a generous pappardelle all Bolognese, with hearty meat sauce; and bracing rigatoni with broccoli rabe, sausage and sweet peppers in pink sauce.

And La Pace with Chef Michael may have a pasta special. The other night, it was a terrific duet: lobster ravioli with pink sauce paired with airy gnocchi in a filetto di pomodoro sauce.
