Ralph Perrazzo, chef-owner of BBD’s — Beers Burgers Desserts in Rocky Point, has gotten serious about authentic Japanese ramen. With a few Japanese craft beers, Perrazzo is offering ramen soup as a special on Friday night  as well as over the weekend and, probably, beyond. It's not a dish you'd find at any other burger house on Long Island.

The soup, Perrazzo said, is made with products sourced from Japan. He has been hard at work for two days cooking a pork and chicken broth, to be combined with a house-made dashi, or “floral sea-smelling broth” incorporating such Japanese products as dried sardines, dried squid tentacles and fresh bonito. Into the soup will go braised pork belly, half-cooked eggs, shaved scallions and ramen noodles brought in from noted noodle maker George Kao of Sun Noodle in Teterboro, N.J.
