From the people who brought you Sage Bistro in Bellmore, Brasserie Persil in Oceanside and Sage Bistro Moderne in Woodbury comes Aperitif in Rockville Centre, which opened last Monday in the space that last housed Aqua.
Co-owners Peter Otkas (born in Turkey) and executive chef Julio Velasquez (born in El Salvador) do well together when it comes to creating French restaurants. This one they're terming a bistro-lounge-bar. It serves wines by the glass (about 45 of them) as well as a roster of small plates (such as steak tartare and smoked trout rillettes), along with such French-style entrees such as moules et frites and magret de canard.
A late night weekend menu kicks in at 11 p.m. and runs until 1 a.m. on Friday and Saturday nights.
