Summer begins this evening – at least in East Patchogue, where Chachama Grill chef owner Elmer Rubio presents the first Wednesday lobster bake of the season.

What do you get for $47 a person? A lot, actually. The meal starts with either steamed Prince Edward Island mussels in a garlic white wine sauce with shallots and herbs; or a bowl of lobster bisque, followed by a salad of baby organic greens with fresh herbs, a goat cheese crouton and a mixed-herb vinaigrette. Then, there’s the lobster – a 2-pounder – that comes with grilled sweet white corn, ancho chile lemon butter and a baked Idaho potato. The finale is a medley of sorbets.
