The dish on Long Island's restaurant and food scene.

There’s been a changing of the signs at the Huntington Station manse most recently home to the short-lived Italian restaurant Vicenza — and, before that, a Mexican restaurant, Pancho Villa’s.

Apparently, the place is going Mexican once more. The sign reads “Zapata’s” and sports a photo of the Mexican Revolution hero Emiliano Zapata.

There are restaurants named for the mustachioed icon all over, from New Haven, Conn., to Norcross, Ga., to San Francisco and even St. John’s, Newfoundland. What this one will turn out to be —  just another chimichanga house or (dare I hope?) a haven of Mexican authenticity — remains to be seen. Stay tuned.

Zapata's will be at 107 Jericho Tpke., Huntington Station
