These colorful iced cookies brighten any Kwanzaa table. If you are pressed for time, a commercial icing may be substituted for the homemade one used here.
1/2 cup unsalted butter
2/3 cup sugar
1/2 teaspoon vanilla
1/2 cup creamy peanut butter
1 1/2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
2 cups confectioners' sugar
1 teaspoon vanilla
8 to 10 tablespoons heavy cream
Few drops food coloring in red, yellow, green, purple, and black
1. Preheat oven to 350 degrees.
2. Cream together butter and sugar until smooth. Add egg and vanilla, beating until smooth. Add peanut butter; blend well. Blend in flour, salt and baking soda.
3. Roll out dough on a floured board to 1/4 inch thick. Using a 21/4-inch circular cookie cutter, cut out cookies. Bake on a cookie sheet 8 to 10 minutes. Cool.
4. For icing, beat together sugar, vanilla and heavy cream. Divide into equal parts, according to the number of colors you are using. For each bowl of icing, add drops of food coloring until you reach the desired depth of color. Put each in a pastry bag (or use a plastic bag with a corner cut off) and pipe icing onto cookies in thin lines. Repeat with each color. Let dry before stacking.
Makes about 35 to 40 cookies.
