Macaroni and cheese is part of a feast for Kwanzaa, an African-American celebration that has traditions that are old and new.


1 (16-ounce) box elbow macaroni
1/2 stick butter
1/2 cup flour
2 cups warmed milk
4 eggs, beaten
2 teaspoons salt
1 teaspoon pepper
8 ounces shredded Cheddar cheese
4 to 6 ounces sliced Cheddar


1. Boil macaroni until slightly undercooked according to package instructions. Drain and rinse.

2. In saucepan over medium heat, melt butter. Stir in flour and cook a few seconds. Then, whisk in milk, stirring until smooth. Remove from heat. When mixture has cooled, whisk in eggs, salt and pepper.

3. Preheat oven to 350 degrees. In large buttered casserole, layer macaroni and shredded cheese, making 3 layers. Pour on milk and egg mixture. Top with sliced Cheddar. Bake until top Cheddar is melted and the casserole is bubbly.

Makes 4 main-course servings, 8 as a side dish.
