Over the past decades, fajitas have become a Tex-Mex classic. The dish features spiced meat served sizzling with peppers and onions; roll everything up in a soft tortilla -- preferably with guacamole, pico de gallo, shredded lettuce and, perhaps, cheese or sour cream.

Here are four places to find fajitas, each with its own spin:

COZYMELS COASTAL MEX, 177 Corporate Dr., Westbury, 516-222-7010

SOMBRERO'S SOUTHWEST GRILL, 30 Indian Head Rd., Kings Park, 631-544-5000

It's not often you find roasted pork carnitas as a filling for fajitas. At this ultracasual cantina, the meat is moist and tender. And although it's from a steam table, it works beautifully, rolled in flour tortillas with peppers and onions. Note that pico de gallo comes on demand; guacamole costs extra. $10.99

DEL FUEGO TEX MEX KITCHEN & TEQUILA, 429 North Country Rd., St. James, 631-963-6900 and 117 Deer Park Ave., Babylon, 631-620-3700

These lively Tex-Mex spots offer fine surf-and-turf fajitas featuring shrimp and filet mignon. $19

SENOR NACHOS, 31 S. Middle Neck Rd., Great Neck, 516- 466-0011

In a cavernous space is dominated by big, splashy folkloric murals, you'll find the "Mr. Nacho mix" fajitas -- steak, chicken and shrimp sizzling with onions and peppers in an iron skillet.
