Long Island is no longer a culinary wasteland for vegans. Choices are expanding all the time. Check out these four restaurants, each putting its own culinary spin on meatless, dairy-free eating.

The cuisine of West Africa is the focus at this friendly little place offering a roster of vegan options, among them curry vegetables, jollof rice, spinach stew and fried yams.

LITTLE FU'S, 1739 Peninsula Blvd., Hewlett

Tucked into a busy supermarket strip mall is this friendly Chinese-Japanese-vegetarian restaurant with a separate vegetarian menu with many vegan selections. Get a protein fix from faux meat (made from soy and wheat protein) when you order Sichuan-style beef or chicken with hot peppers and peanuts.

At this counter-service Asian spot, soy-based meat substitutes work well in classic Chinese preparations. Standouts include pepper steak, kung pao chicken and Japanese eggplant, either with spicy garlic sauce or with tofu.
