The dish on Long Island's restaurant and food scene

Nearly hidden away in a supermarket strip mall is Singha Thai, a modest looking little restaurant that's been open about two months. While it doesn't yet have a liquor license, it  possesses something more important: pizzazz.

Here, any sweetness is balanced with fire. A bowl of tom kha gai (chicken coconut soup, ($3.50), crimson with chili peppers, packs a nuanced heat. A Penang chicken curry ($11.95), ordered medium hot, is exactly that. And drunken noodles with beef ($9.95), asterisked with a chili pepper, manages to both electrify and comfort.

Singha Thai is at 74 Farmingdale Rd., West Babylon, 631-669-8200.
