If you've never tasted tacos de lengua, you owe it to yourself to try this savory Mexican specialty.

It starts with beef or pork tongue that's been braised with garlic and spices and, sometimes, grilled before being cut up. The meat is placed inside soft corn tortillas and usually topped with chopped cilantro, diced onions and, perhaps, a dollop of guacamole.
