ABOUT THE FARM In its fifth growing season, Amber Waves aims to bring grains back to Long Island. "We hope people will discover new varieties of foods that they haven't encountered before," says Katie Baldwin, who farms with co-owner Amanda Merrow. Each year the two farmers have tried to introduce something new to the CSA. For example, they're growing corn for polenta that will be incorporated into the 2014 CSA. "We're always experimenting and adding things."
