    Lemon Leaf Thai Restaurant $$ | Thai 197 Mineola Blvd Mineola Discover contentment in such dishes as pad see-yu (a melange of broad rice noodles, broccoli, beef and eggs) and mango duck, a visual knockout in shades of orange and green and with a savory depth.

    Phayathai $$ | Thai 735 Hawkins Ave. Lake Ronkonkoma Delectable choices abound, from chef-owner Veerawat Satsri's subtle tom yum goong, the classic Thai shrimp hot and sour soup, on through the Penang salmon, a thick, perfectly seared fillet plated over spinach and topped with chopped shrimp and a coconut curry sauce.

A duck salad is rife with nuances, as is a saute of squid, shrimp and scallops with chili sauce, vegetables and basil.

    SriPraPhai $$ | Vegetarian, Thai 280 Hillside Ave. Williston Park The kitchen adroitly balances the hot, salty, sour and sweet. Case in point: larb, a blend of ground pork with mint, chili and lime that explodes across the tongue. Also notable: BBQ pork tenders, papaya salad, beef noodle soup.

    Sri Thai $$ | Thai 14 New St. Huntington Here, even the mildest dishes are rife with complex flavors. Pad ginger shrimp features plump, sweet shellfish; crispy duck lives up to its description; and a Northern Thai salad called nam pairs warm chicken with chile peppers.
