Miguel Sanchez, owner of Arco de Cuchilleros, grew up in his parents' tapas restaurant, the longtime Chicago favorite La Paella, now closed. "It's a social dining experience," Sanchez says of tapas, "and that makes it more fun." In nice weather, Arco's glass front is opened to Halsted Street and the backyard patio accommodates sippers of sangria and nibblers of the restaurant's 40 different varieties of tapas.
