With multitudes of diners peppering Long Island's landscape, it may be hard to distinguish one from another. Not when it comes to the Airport Diner, says manager Peter Hiones, of his family's longstanding Bohemia-based eatery. In business since 1975, Hiones says his father Simon (who founded and owns the establishment) set the high standard of service and quality customers have come to expect. Hiones says his family's solid work ethic has not gone unnoticed by the many regulars who stop by to eat. "At lunch time, we have everyone from millionaire businessmen to high school kids coming in," he says of the local neighborhood crowd, many of whom he and his family have come to know. Whether diners are stopping in during the wee hours of the morning for a hot cup of coffee and freshly baked blueberry muffin or stopping by for a dinner of fresh flounder, he says the Airport Diner offers hundreds of freshly prepared items to choose from daily. "We have at least six to eight types of fish on the menu each day," notes Hiones. Hiones says customer favorites include the flounder, salmon, halibut and red snapper. Another popular request, he says, is the family's house Greek dressing. "People always tell us we should bottle it."
