Ceviche, long popular throughout Latin America, features raw fish and/or seafood that's been cured in a citrus marinade, which "cooks" it. Over the past few years, ceviche has had countless adaptations -- and not just at Latin restaurants.

Here are four takes.

A mango-accented tuna ceviche fills one of three assorted tuna tacos at this popular gastropub. ($12.95)

GALLO RESTAURANT, 3 E. Main St., Patchogue

This attractive Colombian spot in the heart of Patchogue serves a piquant and refreshing shrimp ceviche laced with pico de gallo. ($11)

DOMO SUSHI, 180 Rte. 25A, East Setauket

The sensational ginger-garlic-soy yellowtail ceviche is one of several at this Japanese restaurant whose chef-owner worked at a popular Japanese-South American restaurant in Manhattan. ($9)


This unpretentious little strip mall spot that pays homage to the land of chef-owner Boris Torres' birth offers cool, lustrous, flawlessly fresh mixed seafood ceviche. ($17)
