Maggie loves pasta. It's probably the only meal she'll finish and look for more. We usually make it for her with a little margarine and some Parmesean cheese, or we'll use a little bit of tomato sauce. I've also been tossing in different ingredients to jazz it up, so we've tried meatballs, peas and spinach on different days.

The other night I was searching for recipe ideas and came across, a new website from Disney that is filled with thousands of crafts, games and recipes for kids and families. I have to say I'm hooked! Not only do the recipes look delicious, they're so easy to make -- which is great for quick meal ideas on weekdays.

The first recipe we tried was a simple chicken and pasta dish that was delicious. The best part? Maggie, Jason and I enjoyed the same meal, which cut down on dishes and allowed more time for us to play together outside before bedtime. We served it warm, but there was so much left over I took some cold for lunch the next day.

Roasted Chicken Pasta Toss
(Serves 6)

1 pound pasta, any short cut style
1/2 cup extra-virgin olive oil
1 cup basil
1 teaspoon salt
1/2 teaspoon black pepper
2 cups store bought rotisserie chicken breast, cut into 1/2-inch dice
14 ounces mozzarella, cut into 1/2-inch dice
1 cup grape tomatoes

1. Prepare pasta al dente, according to package directions.
2. Place olive oil, basil, salt and pepper into a bowl of a food processor and process until smooth, about 1 minute.
3. Pour mixture into a large bowl and add in pasta, chicken, mozzarella and grape tomatoes.
4. Toss gently to coat.
5. Serve warm or refrigerate overnight and serve the next day.
