THOMAS'S SCRAMBLERS

Hot out of the skillet at Thomas's Ham & Eggery in Carle Place are three-egg scramblers, or fancied-up scrambled eggs. They're similar to omelets but lots creamier, since their fillings are scrambled right in.

A new menu insert lists five types of scramblers, at $9 each. The Popeye, with spinach, onion, bacon and Jack cheese; the Italian with prosciutto, fresh basil, plum tomato and Fontina cheese; the Texan with bacon, sausage, onion, pepper and Cheddar, and the Lox and CC with chopped nova, scallion and cream cheese.

Then, there's the Mexican, with chorizo sausage, jalapeños and Jack cheese. It was sumptuous and spicy -- in fact, sensational. Also included: home fries and toast. Owner Tom Koukoulas said he will, on request, do a junior scrambler using two eggs, for $7.

SMOKY, JUICY TENNESSEE 'CUE

Some amazing 'cue I had the other night at Tennessee Jed's in Wantagh, a place that's only gotten better with age.

Pitmaster co-owner Francisco Gonzalez's St. Louis ribs, ordered with only its dry rub ($14, half rack), were meaty, juicy and smoky. The same held true of the half barbecued chicken ($11), an item that's rarely the equal of ribs -- except in this case.

Sides held their own. While the mac and cheese looked way too creamy, the al dente pasta held up well and the unctuous cheese sauce was irresistible. Rich creamed spinach, sweet potato fries with campfire toastiness and smoky baked beans rounded out the meal.

EATING OUT GETS EASIER

Mara Levi, executive chef and owner of Mara's Homemade in Syosset, has come out with a new menu that cuts prices. In this economy, said Levi, "We needed to do something drastic, so we just tightened our belts."

As examples, Levi offered fried chicken, once $16, now $13. Crawfish étouffée, which used to cost $14, is now $11; jambalaya, formerly $12, is now $10. She added a house-ground burger for $7 and lowered the cost of the lobster roll from $20 to $17. You also can get smaller portions of smoked barbecue, such as a quarter chicken, with jalapeño cornbread and two sides, at $7 for dark meat, $8 for white and a quarter rack of St. Louis ribs for $11.
