Thursday is all about turkey, stuffing and family. Friday, however, you may be well have had your fill of all three. May we suggest planning a Chinese meal?

Intrepid seekers of authentic cuisine should head directly to Stony Brook. The college town is burgeoning with authentic Chinese restaurants and on Thanksgiving, many of their regular customers, Chinese-American students, will be home celebrating with their families.

In just the past year, two new restaurants have joined Stony Brook standards Green Tea and Red Tiger Dumpling House.

Hand-pulled noodles — made in full view of the dining room — are the specialty here. After they are briefly dropped into boiling water, they are served in more than a dozen broth-based dishes, including vegetable, beef tendon, ox tail, roast duck, spare ribs and seafood. There are also two “dry” preparations, sesame noodles and noodles with minced pork. Only the “house” noodles, with various cuts of beef, tops $10. The décor is modest in the extreme, but who needs a decorator when all eyes are focused on the show? 1320 Stony Brook Rd., Stony Brook, 631-675-6725.

This raucous newcomer offers a large menu focused on the gutsy cuisine of Northern China and includes almost two dozen varieties of boiled dumplings (such as pork and leek, pork and dill, and pork and cabbage) and almost three dozen hand-pulled noodle soups (among them, shredded pork, wonton and fish ball, beef tendon, lamb chop, honeycomb tripe). Plus buns, pancakes, pan-fried noodles, congee and cold dishes. Nothing is more than $10. 1015 Route 25A, Stony Brook, 631-751-6888.
