For when you'd prefer to leave it to the professionals, here are five excellent steaks and the restaurants where they're perfectly prepared.

Peter Luger in Great Neck is the suburban branch of the Brooklyn landmark. It's all about one great thing: the porterhouse, served for two, three or four. Creamed spinach and German fried potatoes are the essential sides. Steak for two is $99.50; three, $149.25; four, $199. 255 Northern Blvd., Great Neck; 516-487-8800.

The bone-in rib eye at Tellers: An American Chophouse in Islip is a grand affair, deftly trimmed and big enough to wield as a racket. $65. On the side: deep-fried, grated potato nuggets and roasted Brussels sprouts with pancetta. 605 Main St., Islip; 631-277-7070.

The bone-in strip steak at Mac's Steakhouse in Huntington is juicy, fibrous, and mineral-sweet. Typically, it's aged 30 days; $48. But sometimes Mac's has a 60-day one that's extraordinary for $54. Sides: roasted garlic mashed potatoes and rum-spiked plantains. 12 Gerard St., Huntington; 631-549-5300.

The most tender of steaks, filet mignon requires minimal extras. It's prepared especially well at Bryant & Cooper in Roslyn. $39.50 for 10-ounce steak; $49 for the 16-ounce. Pair it with Lyonnaise potatoes and creamed spinach. 2 Middle Neck Rd., Roslyn; 516-627-7270.

The marinated Romanian steak at Frank's Steaks in Jericho and Rockville Centre is packed with flavor, from garlic and more. Prices range from $19.95 for the skirt steak hero to $33.95 for the 16-ounce dinner portion. Sides: potatoes with sauteed onions, creamed spinach. 4 Jericho Tpke., Jericho, 516-338-4595; 54 Lincoln Ave., Rockville Centre, 516-536-1500.
