You probably don’t know how much you’re craving a waffle with super-sweet toppings, from melted marshmallow and chocolate ganache, to Fruity Pebbles or cannoli filling.
But when the desire strikes, make your way over to Liege Waffle Co., where one waffle is crazier than the next. It’s a pop-up stand within A&G Bakery in North Babylon, and is only pressing the iron on Sundays.
These treats are the work of employee Tyler DiFebo, who was seduced by gaufre de liege when he tried the Belgian treats while on vacation in Europe.
DiFebo’s baroque waffles are created with dough that’s somewhat like a brioche doughnut combination studded with sugar pearls and slathered with ingredients more common in a milkshake or a sundae.
It’s hard not to polish off one of his unorthodox waffles, with their crisp ends and soft, sweet interiors, especially if you score one while it’s hot.
DiFebo has been working at A&G Bakery — one of two locations, the other in Huntington — since 2011, when he graduated from culinary school in Manhattan.
Visit him here until he expands hours, or until he raises enough capital to roll out his very own Liege Waffle Co. truck in the near future.
For now, sales start Sunday at 9 a.m. and wrap up at 2 p.m. Each waffle costs about $4.
