Not that long ago being a vegetarian on Long Island meant very limited choices. But the rise of excellent Indian and Mediterranean restaurants has broadened the repertoire and made the quest easier. Here are three spots recommended for anyone who likes vegetables.
Akbar in Garden City is the most opulent and ornate of Nassau’s Indian restaurants. That goes for the presentation of the food, too, vegetarian or not. Recommended: Gobi Manchurian. or cauliflower with onion and garlic; samosas, or pastries filled with peas and potatoes; baingain bharta, eggplant in yogurt sauce; pakoras, or vegetable fritters; vegetarian thali, or sampler platter; and all vegetarian breads. Moderate to expensive.

House of Dosas in Hicksville is a vegetarian eatery that gives you a taste of regional cuisine. Recommended: all dosas, or rice crepes with assorted fillings; uthappams, or rice-and-lentil flour pancakes, especially fine with garlic, onions, and chilies; semolina crepe with chutney, onions, chilies, and cheese; curries of cauliflower, lentils, and eggplant. Inexpensive to moderate.

Tula Kitchen in Bay Shore offers Mediterranean, vegetarians, and eclectic selections. Recommended: bruschetta pizza; stuffed acorn squash; sundried tomato hummus with pine nuts and pita; baba ghanoush; vegetarian moussaka with spinach and eggplant; quesadilla with roasted vegetables and feta cheese; sesame-crusted tofu; quinoa burger; vegan lentil burger; tempeh Reuben-style. Inexpensive to moderate.
