The long-awaited opening of Comtesse Therese Bistro is slated for this Saturday. Over the weekend, the Comtesse Therese wine-tasting room was unveiled.
Comtesse Therese plans to offer dishes based on local ingredients from chef Arie Pavlou, who cooked at the departed Coeur des Vignes in Southold. At the wine-tasting bar, customers tasted smoked bluefish, a DLT (yes, with local duck), and mini-tarte Tatins. Pavlou's repertoire includes local striped bass with truffle sauce.
Theresa Dilworth runs Comtesse Therese and the Le Clos Therese vineyard. The wines are made at Premium Wine Group, the custom-crush facility in Mattituck. In 2008, Comtesse Therese produced 1,000 cases of wine.
