Relatively low in calories and fat, the bison -- or buffalo -- burger often gives beef and turkey patties a juicy, flavor-rich run for the money.

Overcooking, however, can render these burgers dry and unpalatable. Medium-rare is as done as you want to go.

Here are a few places where buffalo burgers are home on the range:

TWEEDS RESTAURANT & BUFFALO BAR

Buffalo, done any number of ways, is the raison d'être for this downtown restaurant dominated by a huge buffalo head hanging over the bar. Here, you can get your burger plain or with sauteed onions, mushrooms, bacon or cheese.

BURGER 9 POINT 5

At this colorful little burger restaurant, bison is just one of many types of patties you can order. Try the Rodeo version with barbecue sauce, Cheddar and onion rings.

PREMIER DINER

The bison burger at this popular diner is big, smoky and juicy -- every bit as good as the beef burger.

690 Commack Rd., Commack, 631-462-1432
