Bruce Bollman was a Greenport pioneer, opening Bruce's Cheese Emporium & Cafe in 1974 as a purveyor of cheese, bulk, coffee and specialty items. Over the next 35 years, the shop moved twice and expanded its capacity and repertoire to include tables, a counter and a full menu of breakfast and lunch items and baked goods.
In 2013, the shop changed its name to Bruce & Sons, reflecting Bruce's partner, his son Scott Bollman. The younger Bollman, a veteran of Manhattan kitchens, streamlined the menu and strengthened the kitchen's commitment to local items. Among his new dishes are the pressed fig and pig sandwich (prosciutto, fig jam, arugula and pesto on ciabatta, $11), grilled local vegetable sandwich with goat cheese and charissa vinaigrette ($10) and eggs Benedict with tomato and basil hollandaise ($13, and made with Browders eggs of Southold).
