It was the calm before the storm at Buffalo Wild Wings in Farmingdale. At lunch Thursday, all the TVs were tuned to sports, as usual, but most of the patrons were concentrating on their wings. Thursday, starting at 7:15 p.m., March Madness will descend and partisans of Marquette and Miami, Arizona and Ohio State, Indiana and Syracuse, Wichita State and Lasalle will have to split their attention between wing and game.

The wings certainly held my attention. Buffalo Wild Wings is a national sports-bar chain with six locations on Long Island (in Farmingdale, North Babylon, Hicksville, Bay Shore, Westbury and Centereach). The menu includes sandwiches, salads, wraps and burgers, but  wings are the main event here, and they come with 16 sauces and five dry seasonings. For every six wings it's $5.99; order more half-dozens and  the price drops.

We had six orders and thus were able to sample the Parmesan garlic, spicy garlic, honey barbecue and Asian zing sauces, plus the salt-vinegar and chipotle barbecue dry rubs. The wings were fat and meaty. While all the dressings were tasty, we preferred the spicier ones. Our No. 1 favorite was the chipotle barbecue dry rub. Truly addictive.

Buffalo Wild Wings also offers the same treatment to what they call “boneless wings” but are, in actuality, fried strips of chicken breast.
