Cabo is as much a state of mind as it is a restaurant and bar. The place is bold and colorful in design, with beautiful mosiac work and lots of reflective surfaces.
The menu combines bar favorites with Tex-Mex classics. What goes well with a margarita? Chalupas or chicken wings, for starters. The menu covers a lot of territory, from barbecued ribs and chicken to enchiladas suizas to a Southwest quesadilla filled with grilled chicken, black beans, corn and cheese and finished with a sweet red bell pepper sauce. And it wouldn't be Tex-Mex without a choice of sizzling fajitas - grilled chicken, steak, shrimp, salmon or vegetables.
The restaurant holds a happy hour every Friday night from 4 to 7 p.m., with two for the price of one cantina specials. There's also live entertainment with a DJ and dancing most Thursday, Friday and Saturday nights.
At Cabo, a cold winter's evening in Rockville Centre can be a red hot fiesta.
Margaritas: The margarita is king at Cabo. The tangy cocktails come in three sizes and 15 flavors, including mango, raspberry, passion fruit and melon. And, yes, you can get it served in a coconut. Appetizers range from chalupas to guacamole. Tuesdays are karaoke night.
