On Columbus Day, it's traditional to eat Italian food, in honor of the Genoa-born Cristoforo Colombo (his name rendered in Italian). Pesto, the glory of the Genovese table, is a standard item on most local Italian menus, so you might want to raise a forkful tonight.

But why not enjoy the cuisine of Colombia, the South American country named in the explorer's honor? Colombian restaurants are, virtually across the board, dependable locations for great chicken and great value. (I always say: Given the size of their portions, it's a wonder the Colombians aren't the fattest people in the world.) To wit:
