The taco pictured above is not going to win any prizes. But I made it in about three minutes last night with prepared ingredients from Trader Joe’s.
The carnitas (braised pork, $4.99 for 12 ounces) came fully cooked. I just sliced it up and nuked it gently for less than a minute. I heated up a dry skillet and toasted the corn tortilla ($1.49 for a package of 12). The whole thing got topped with mild red salsa ($2.99 / pint) and then a dollop of Greek yogurt.
Would this have been better if I had made my own salsa? Added some sliced red onion and chopped fresh cilantro? If I’d had a jar of crema around instead of the yogurt? Yes, yes and yes. But I gotta tell you, this was a pretty good taco.
