There’s a bit of irony in the name of the burger spot that just made its debut in the former Plainview home of Cheeburger Cheeburger (which still has locations in Farmingdale and Great Neck). DirtyBurger is all about clean eating — hormone and antibiotic-free beef and from-scratch preparations. Even the ketchup is made on premises.

Chef Ian Russo came up with the name after winning a “best steak in New York” designation from New York Magazine in 2005 with the “dirty drunken rib-eye” served at Ian, the restaurant he owned on Manhattan’s Upper East Side. Since then, Russo has parlayed his proprietary “dirty dust” spice blend into an Internet retail business ( and a signature burger.

As Russo explains it, he dips the burger (or other protein) into dirty dust, which contains cayenne pepper, and after grilling it, adds honey. The heat and sweetness mitigate one another, he said.

At the new restaurant, you can order at the counter or opt for table service. Menu options include dirty wings ($8), the original dirtyburger ($7), a turkey version ($7), a dirty lamb burger ($11), a dirty veggie burger ($9) a dirty skirt steak ($17) and a roasted beet salad ($7; $12). Shakes ($6) are available regular or “dirty,” with the honey and dirty-dust mixed in. An intriguing concept.
