Chef Bill Mammes' menu will include Crescent Farm duck mousse, paired with Wolffer's 2007 Noblesse Oblige sparkling wine; seared arctic chair with 2010 Classic White wine; veal tenderloin and braised veal cheek with the 2005 Lambardo Merlot; and rhubarb cheesecake with the 2008 Diosa late-harvest chardonnay.
