Theresa Dilworth, owner of Comtesse Therese Bistro, describes her restaurant thus: "We're totally into local, grow-it-yourself, pick-it-yourself, fish-it-yourself, harvest-it-yourself."

Wine from its own vineyard, handpicked herbs, and a duck smoker in the back bring French cooking alive at this bistro in Aquebogue. Adam Hofer from Cutchogue can testify, "It's nice to sit outside here and smell the smoker in the background. It's pretty cool stuff here."

Host Meredith Daniels heads out East to wine country to try this North Fork dining spot. 

Past and present merge in chef Arie Pavlou's French bistro menu, which optimizes local resources and herbs grown on-site. A $35 prix fixe is offered on Wednesday and Thursday evenings.
