Skip the tequila. Forgo the chips. Avoid the salsa. And try something new for Cinco de Mayo: ice cream laced with habanero pepper.

It's the flavor-of-the-week at Snowflake in Riverhead. Long Island's scientist of ice cream, Stu Feldschuh, starts with chocolate-and-cinnamon ice cream. To it are added dark cherries and a hard dip of chocolate and habanero pepper that's spread through the entire mix, balancing sweet and spicy.
