Skipper’s in Greenport, a diner since 1979, is under new ownership and will soon have a former toll booth outside it operating as a lobster roll shack.
Proprietor Bryan Vallanti also opened the nearby gastropub Industry Standard in November. Its chef, Greg Ling, oversees the new Skipper’s kitchen, as well. The name will stay the same, for now.
The former eight-page menu at Skipper’s has been whittled down to a single page, with appetizers like giant pretzels, mussels in white wine, chicken fingers and a chopped salad. Look for sandwiches such as fried flounder or crab cakes and entrees from beer battered shrimp to linguini with clam sauce; cioppino or halibut in lemon butter with capers. Appetizers are $10 to $13, while entrees are $18 to $29.
As for the toll booth, it’s being painted red and is to be outfitted with a lobster head and tail. Planned opening is around July 4, Ling said.
