It’s the last weekend of winter. Daylight saving time is here. And those very confused daffodils can make their entrance without (you hope) a burst of snow. Here are three refreshing restaurants to welcome spring.

Sandbar in Cold Spring Harbor is a bright, reliably excellent spot for stylish American fare. Recommended: smoked trout with horseradish aioli; duck tacos with daikon, jalapeno, and hoisin sauce; tuna crudo with blood orange, olive oil, and pink peppercorns; housemade ricotta; chickpea fries; seared bay scallops; pancetta-wrapped monkfish. Moderate to expensive.

George Martin The Original in Rockville Centre bridges winter and spring with ease and dependable, mostly American dishes. Recommended: avocado toast Caprese; herb-roasted chicken; grilled swordfish; pork jaegerschnitzel; filet mignon sliders with crumbled blue cheese; filet mignon with horseradish sauce; ribeye steak. Moderate to expensive.

Locale in Patchogue is one of the newer eateries defining the lively downtown. The food is homey and worth a taste. Recommended: arancini, or rice balls packed with ragu; chicken Milanese; mozzarella in carrozza; linguine with white clam sauce; four-cheese pizzette; profiteroles. Moderate.
