Kielbasa-kraut chowder, swiss, pretzel, grapefruit-onion marmalade

Marinated squid salad, white beans, apple, artichoke, minted pine-nut vinaigrette

Smoked salmon-potato ravioli, arugula, plum tomato confit, sea-urchin-garlic cream
or
Charred duck breast, wine-braised potatoes, fennel fondue, blood orange, fried capers

Ribeye, truffled mac 'n cheese couscous, BLT-stuffed mushroom, hollandaise
or
Red snapper en papillote, red cabbage, snap peas, ginger-snap rutabaga, rum nage

The cost is $72 a person; $125 with wine pairings.
