Trata Estiatorio in Water Mill starts grilling the fish again tonight. The Greek seafood specialist, which also has branches in Roslyn and Manhattan, is on a Thursday to Sunday week pre-spring.
But devotees will be able to sample the fish and more every day from March 21 to March 28 -- Hamptons Restaurant Week.
Chef Luis Falcon, who earned three stars for the Roslyn Trata last year after closing the Water Mill restaurant for the season, will be dividing his time between the two establishments.
