21 Main, the traditional steakhouse and American restaurant in West Sayville, is going molecular -- at least when it comes to ice cream.

The eatery now offers liquid-nitrogen-produced ice cream. On busy nights, the fireworks take place in the kitchen; on quieter evenings, tableside. The flavors include pistachio, mango, cherry and vanilla. Cost: $10 per serving.

21 Main also continues to offer vinous sorbets, made with riesling, cabernet sauvignon, pinot noir and nose wines.
