G&S Tiny Treats delivers big flavors in small cookies

When it comes to cookies, Shinnell Constantine and Giovanna Santiago are bucking the current trend of huge, unconventional and mashed-up — a core of rainbow, say, surrounded by a mantle of pumpkin spice. Their company, G&S Tiny Treats, specializes in bite-sized confections whose flavor components your grandmother would recognize: chocolate chip, vanilla, snickerdoodle.

The two women (Constantine is a special-education teacher, Santiago runs a medical office) met in college where they became fast friends and baking buddies. "We always talked about opening a baking business," Santiago said. A year ago they put their money and time where their mouths were.

They started by playing with recipes for what Constantine called "your normal cookies," but with a twist — two cookies sandwiching a coordinating filling. But the result was too big and unwieldy. Then they started shrinking the cookies … and shrinking the cookies more. It took a lot of fiddling to make the cookies plump and soft, the filling fluffy but stiff enough not to get squished.

The business has two sales legs: Customers follow @gandstinytreats on Instagram and Facebook, and place orders through the website. The cookies, which are baked in a commercial kitchen in Farmingdale, can be picked up or delivered anywhere on Long Island. (Family and friends help with deliveries; Santiago joked that "we pay them a cookie per mile.")

A few times a month, the Tiny Treats pop up at events — a car show in Baldwin, a Juneteenth celebration in Freeport. It’s here that they can do market research, and where they have learned that they're on the right track. Constantine observed that "a family will get a box with a lot of different flavors and everyone gets exactly what they want, and nobody has to share."

In addition to chocolate chip, confetti (sugar cookies with rainbow sprinkles), chocolate chunk and snickerdoodle, there are specialty and seasonal flavors such as s’mores, strawberry shortcake and white chocolate-cranberry-oat. For larger orders, regular fillings can be swapped out for maple cream, marshmallow fluff, whipped cream cheese and more. Prices start at $2 per cookie.
