Panic set in earlier today while I was driving down Jericho Turnpike in Mineola. Freshway Market was gone, replaced by North Shore Farms. Now North Shore Farms is a fine establishment, but I worried that if Freshway wasn’t there, then neither would its resident artisanal bread baker Frank Cardinali, whom I wrote about last year. Cardinali, founder of the eponymous (though since sold) bakeries in Carle Place and Syosset, started baking at Freshway soon after it opened in October 2009.

Phew! Not only was Cardinali at his post, but he was chatting with Freshway’s former owner Peter Bivona, who is friends with the owners of North Shore Farms. Bivona made noises about some new future project that may or may not involve bread. He said he’d keep me posted. For now, Cardinali’s fresh breads can still be had in Mineola.

The Mineola North Shore Farms is the chain’s fourth location. The others are in Glen Cove, Port Washington and Great Neck.
